Myth: When your baking sheet gets brown or black marks, you should scrub it clean.

Fact: Baking sheets that develop a dark patina are actually better at cooking. [1] [2] (unless you're cooking pastries)

If you want to maintain the brown/black patina, clean it normally with soap. However, there are two things to specifically avoid — don't scrub with anything abrasive, and don't put it through the dishwasher.
