flavor terminology
The classic way is to talk about three types of flavor "notes". [2] These are very similar to the top / middle / base notes in perfumery.
- high notes — Flavors that you notice immediately, and they don't linger very long. These are bright, effervescent, sparkly flavors.
- mid notes — Not as immediately noticeable, and they linger for a moderate amount of time.
- base notes — AKA 'aftertaste', these are the flavors that take a while to be noticeable, and they linger for a longer amount of time.
Flavor combinations can described as 'fullness' or 'roundness'. This means there's several different notes present, that fit together well.
