Bolognese sauce

This article says that it's worth learning how to make Bolognese sauce for its flavor.

There's a difference between traditional Bolognese sauce in Italy (called ragù alla bolognese) and what's sometimes called Bolognese outside Italy. And if one is trying to be authentic, it's usually served with tagliatelle or in lasagna. Outside Italy though, it's often served with spaghetti.
