The benefit of using a Ubicom/Parallax SX is that: 1) it's fast, so it can do high-frequency stuff, and/or eliminate external circuitry, 2) it can be reprogrammed many times, so that the same hardware can be repurposed to do many different jobs (even one-off tasks)
