Builtin hotkeys — Configurable ones
By default, Android has the ability to start apps based on Search+A, Search+B, Search+C, etc.
Go to Settings > Applications > Quick Launch to configure these.

In addition, all entries that appear when you press the Menu key have their own shortcut. This works in EVERY application. After pressing the menu key and opening the menu, long-hold the menu key. The Menu+Letter combos will briefly appear.
