Minimal installs are a good idea for server environments.

Ubuntu

use the Server Edition ISO
it may be a good idea to go with an LTS release

Debian

use the Alternate install ISO
when you get to the tasksel screen, make sure ALL ITEMS are unchecked (the "Standard System" is checked by default, uncheck that)

GUI on Ubuntu

alternate ways to install a GUI on Ubuntu 10.04 LTS:
- apt-get install xorg [1]
- apt-get install gnome-core xinit [1]
- apt-get install gnome-desktop-environment
- sudo apt-get install gnome-core gdm gnome-system-tools network-manager-gnome human-theme x11-xserver-utils tangerine-icon-theme gnome-themes-ubuntu gnome-themes-selected ubuntu-artwork jockey-gtk gnome-screensaver xcursor-themes gnome-utils file-roller [1]
  - network-manager-gnome specifically says "not intended for servers", which is kinda "duh"
  - IMHO, jockey-gtk is also not appropriate for servers
