East Asian dumplings

the steam—fry method

Quick summary: (from back of Laoban dumpling package)
  1. Heat pan over medium-high heat. Add 2 tbsp oil, place dumplings in pan. Add enough water to just cover bottom of pan, cover, and cook for 5 mins.
  2. Remove cover and keep cooking until water evaporates and bottoms are brown, about 5 mins.
Before progressing beyond the steaming step, make sure the internal temperature is okay (not frozen) by either cutting one open or using a meat thermometer.

the fry-steam-fry method

Quick summary: 1) Par-fry the frozen dumplings, 2) Add water to the pan and cover to steam, then 3) finish frying them once the water evaporates.
