I'm trying to eat more veggies, and I like omelettes, but I eat alone, so I don't always make a lot
at once. I tried Jimmy Dean's breakfast
skillets, which is a frozen bag containing:
- breakfast sausage (already cooked, then frozen)
- green peppers
- red bell peppers
- onions
- diced potatoes (cooked then frozen)
Instructions given:
- pour frozen ingredients (1.5 cups/140grams per serving) into large pan
- cook for ~5 minutes
- move everything off to the side of the pan
- pour scrambled eggs (~1.5 eggs per serving) into the empty half of the pan, and cook until done
- mix everything together, add cheese, mix
I like to do quick small meals, but you can actually make the sliced-peppers mixture beforehand, and
freeze it yourself, so you can use the
pre-mix over a couple weeks. Tips on freezing other vegetables:

Other things that could be included:
- diced tomatoes
- corn
- bacon or ham
- spices, obviously
