Things that I've actually gotten to boot over PXE:

DBAN
UBCD (Ultimate Boot CD) — it now officially supports PXE booting, but older versions are easy to convert over too)
Puppy Linux
- humongous initrd.gz is officially supported, but it requires a lot of memory
