A 2002 Subaru WRX. There's a subwoofer under the passenger's seat, but there's perhaps some room beneath the driver's seat. The most likely place I'll put it is the trunk.
Input
RF wireless keyboard, placed either on the passenger seat, or across the driver's chest (via strap around neck). Typing is done on the right half of the keyboard (I drive a manual), with the spacebar being used to multiplex each key to the other half:
The Matias corporation has done something similar, see matiascorp.com, halfkeyboard.com, edgarmatias.com. They've gotten patent #5,288,158 on it. Two people have implemented it in Linux: kernel patch, loadable module. I'll only be using this for personal noncommercial use, so it might not be a problem. Although copyright violations can be prosecuted both at the industrial/large-scale level as well as at the individual level, so patent infringements may not be any different.
Output
Currently have a stock radio, which includes a cassette player, so a cassette adapter will need to be used until the radio is upgraded. I would like to stick to audio-only for safety reasons, but there are so many compelling reasons to go with an LCD screen.
